Food is a huge part of Cajun culture, and there will be plenty at the invasion: from succulent, boiled crawfish, crabs, and shrimp, to rich and spicy Cajun dishes such as étouffée, boudin, and jambalaya, to Texas BBQ. Inventive cooks will offer new takes across culinary traditions, and, of course, festival classics such as corn dogs and funnel cakes will be in plentiful supply. Here is some of what we’ll be serving, with more rolling in every day:
